Vinificazione:
Spontaneous fermentation in steel, with maceration on the skins for 8 days for both qualities. 
 
Affinamento:
Part of the wine is placed in concrete tanks, while the rest lies in exhausted oak barrels. On the first days of May the different masses are jointed into a single steel tank, before the bottling, that happens by the end of May.
